The Bacon Chocolate($7) contains"applewood smoked bacon, alderwood smoked salt and rich milk chocolate". Contains 41% cacao.
"The newest flavor from Vosges, the inimitable Mo’s Chocolate and Bacon Candy Bar, combines smoky bacon and sweet milk chocolate. Vosges creator Katrina explains the origins of this unique combination: "Crisp, buttery, compulsively irresistible bacon and milk chocolate combination has long been a favorite of mine. I started playing with this combination at the tender age of six while eating chocolate chip pancakes drenched in maple syrup. Beside my chocolate-laden cakes laid three strips of fried bacon, just barely touching a sweet pool of maple syrup. Just a bite of the bacon was too salty and yearned for the sweet kiss of chocolate syrup."

sadly, it wasn't that great. it lacked a bacony flavor so it just tasted like choclate and salty pieces of nuts because the bacon was more on the crunchy side.

It's easy to try it yourself and it will be fresh. I'm not sure what they could be doing to the bacon that passes USDA rules and I probably do not want to know.

Get some apple-wood bacon. Very slow cook it in a cast iron pan. You're going to cook it until it turns brown and crispy but is not burned. While that is cooking you can be melting your favorite chocolate bar in a double boiler.

Drain the bacon on white paper towels and pat them until the appear dry.

When I tried it too much chocolate was not that good. A small amount drizzled down the middle had the good chocolate taste but the bacon came strongly through.

I used milk chocolate and Kentucky Legend bacon but Wrights bacon should do well. I'm going to try a more bitter chocolate if I ever feel like trying it again. This was served to some friends along with other snacks.

I like cast iron for this but use what you're comfortable with.
